Despite the increasing number of people choosing a vegan lifestyle, they still make up only a small fraction of the global population. Some studies indicate that as many as 70% of vegans eventually return to eating meat, which suggests that maintaining a strictly plant-based diet can be challenging for many individuals. However, this does not mean that people are not becoming more conscious of their food choices.
More and more people are experimenting with different diets to find what works best for their health and lifestyle. While some opt for plant-based options, others continue to include animal products like eggs in their meals. In fact, eggs remain one of the most versatile and widely consumed foods around the world.

Eggs are not only delicious but also highly nutritious. They provide a range of essential nutrients, including protein, vitamins, and minerals, all while being relatively low in calories. A single large boiled egg contains:
- Selenium – 28% of the daily value
- Vitamin B12 – 23% of the daily value
- Riboflavin (B2) – 20% of the daily value
- Pantothenic acid (B5) – 14% of the daily value
- Vitamin A – 8% of the daily value
- Phosphorus – 7% of the daily value
- Folate – 6% of the daily value
In addition to these, eggs also contain vitamin E, vitamin B6, calcium, zinc, and vitamin D. With just 78 calories, they offer 6 grams of protein and 5 grams of fat, making them a balanced and nutrient-dense food choice.
Are All Eggs Created Equal?
Not all eggs are the same, and there is growing interest in understanding the differences between various types of eggs. There are approximately 8.3 billion egg-laying hens worldwide, and modern farming practices have changed significantly compared to those of previous generations. Today’s hens are bred for high productivity, often laying around 300 eggs per year—compared to about 80 eggs per year in 1900.
However, many of these hens are kept in confined spaces, such as small cages that provide less than a letter-sized sheet of paper of space. This has raised concerns about animal welfare and the quality of the eggs produced.
Cage-Free vs. Conventional Eggs
Research suggests that eggs from cage-free systems may be healthier than those from conventional caged systems. A study by the European Food Safety Authority found that Salmonella Enteritidis is five times more likely to be present in eggs from caged hens than in those from cage-free systems. This could be due to factors like cleaner environments, fewer disease-carrying pests, and healthier gut flora in free-range hens.
Additionally, eggs from cage-free farms tend to have lower levels of chemical residues and dioxin-like contaminants. Some studies also show that free-range eggs have lower cholesterol content in their yolks compared to conventionally farmed eggs.
The Cost of Healthier Eggs
While healthier eggs may offer nutritional benefits, they often come at a higher price. This has led to debates about affordability and consumer choice. In the United States, the federal government recently took legal action against California over its egg production laws.
Legal Disputes Over Egg Production Standards
In July 2023, the U.S. Department of Justice filed a lawsuit against the State of California, arguing that its laws on egg production violate the U.S. Constitution. These laws, enacted through Proposition 12 in 2018, require that laying hens be housed in cage-free environments with adequate space for movement.
The Trump administration criticized these regulations, claiming they increase costs for farmers and lead to higher egg prices for consumers. On the other hand, California defended its laws, stating that they promote better animal welfare and protect public health.
The Impact of Egg Prices
Over the past few months, egg prices have decreased slightly, but they were still up by more than 41% compared to the previous year. This increase was partly due to the bird flu outbreak, which resulted in the loss of nearly 175 million birds since early 2022.
As the debate over egg production continues, consumers are left to weigh the benefits of healthier options against the cost and availability of different types of eggs. Whether it's a plant-based diet or a traditional one, the role of eggs remains significant in many people's daily meals.
